Pancake sun brunch picnic!

Today we had a sunny pancake brunch picnic in our garden. The spring sun was warm and radiant and we could almost hear our skin crunching on the rays of the sun converting them into much needed vitamins. For hours we laid basking on a king sized snow bed couch covered with reindeer hides, while sipping Golden Milk and munching Raw Nougat Hazelnut Cream spread on Buckwheat Pancakes sprinkled with sliced banana, walnuts and coconut chips.
Yep.. that just happened!

Buckwheat Pancakes

5 pancakes

1 dl buckwheat flour
1/2 Tbsp Psyllium husk
a pinch of quality sea/mountain salt
1/2 tsp vanilla
2 eggs
2,5 dl oat/nutmilk

Combine all the dry ingredients. Add eggs and milk and whisk until smooth.
Allow yourself and the batter to rest for 15 min.

Heat up a pan and add some coconut oil. Fry them golden on both sides.

Raw Nougat Hazelnut Cream

50 g hazelnuts (about 3 Tbsp)
2 – 3 Tbsp raw organic coconut oil
1 Tbsp quality organic cacao
1,5 Tbsp raw honey

Grind the hazelnuts in a food processor several minutes until fine and the oils starts to come out. Add melted coconut oil, cacao and honey and process until desirable consistency (more coconut oil – more runny). We like ours like a spread.

Enjoy your pancakes with a variation of topping;

coconut chips
banana slices
goji berries
blue berries

Golden Milk

Golden Milk is a brew of the gods. It is a delicious and nourishing medicine for the entire body, inside out.
First make the paste for the milk:

Golden Paste

1 cup dried organic turmeric
1 tablespoon dried organic ginger
1 tsp black pepper
about 1,5 dl water

Mix all the spices and dilute with water to a desirable consistency (creamy but not runny) be sure to add the black pepper since it  help the body absorb (enhances bioavaliability) the medicinal properties of turmeric.  Simmer for about 7-8 minutes. Let it cool down and put it in a glass jar. Store in refrigerator, will last at least a week. Enjoy every evening and maybe every morning too!

Golden Milk

1 large cup or two small

1 Tbsp Golden Paste
1 Tbsp coconut oil
1/2 Tbsp honey (optional)
3 cups chaga/herb tea or other hot brew or water
1.5 dl oat milk (or nut milk)

Add coconut oil and golden mixture in a hot saucepan and stir in a little tea until smooth, add the rest of the tea, heat and simmer for several minutes. Remove from the heat and mix in the oat milk, honey and if you wish you can add some grated fresh ginger. Pour into cups and enjoy!

This brew puts all sleepless souls to rest.

We are happy to see some early signs of spring; the birds are chirping and feasting in the trees which are already covered in catkins. Spring is awesome!

Winter blessings

Winter is here…
and provides a welcome window of opportunity;
a time to dwell within our dwelling.

Now winter nights enlarge
This number of their hours;
And clouds their storms discharge
Upon the airy towers.
Let now the chimneys blaze
And cups o’erflow with wine,
Let well-tuned words amaze
With harmony divine…

This time doth well dispense
With lovers’ long discourse;
Much speech hath some defense,
Though beauty no remorse.
All do not all things well:
Some measures comely tread,
Some knotted riddles tell,
Some poems smoothly read.
The summer hath his joys,
And winter his delights;
Though love and all his pleasures are but toys
They shorten tedious nights.
